If you’re looking for a delicious and easy dish to make this upcoming St. Patrick's Day, look no further than our RVing friend Regina's Reuben casserole! It’s the perfect dish for campers who want to spend more time outdoors and less time in their kitchen. Regina has been serving this crowd-pleasing recipe for years when she camps with her RV group, so it has been tried and tested by many. She describes the dish as cheesy, comforting, and full of flavor - what else could you ask for? Plus, the ingredients are likely items that you already have in your pantry or are easy to find at any grocery store. So, fire up your ovens and get cooked - this is one camping meal that won't disappoint.
Ingredients:
- 18 ounces corned beef*, sliced thin and cut into inch-wide strips
- 27 ounces drained sauerkraut
- 1 pound shredded swiss cheese
- dark rye bread, crumbled (approx. 3 cups) – reserve 1 cup for the topping
- ¼ teaspoon caraway seeds
- Bottled thousand island dressing**
Directions:
- Preheat oven to 450 degrees
- Grease or “Pam” a 13x9” rectangular dish
- Begin layering, rye crumbs, beef, kraut, swiss cheese and dollops of thousand island dressing.
- Melt about 3 tablespoons of butter and toss with the remaining breadcrumbs to make crumb topping.
- Bake for 30 minutes and ENJOY!
*You can find sliced corn beef at the deli counter at most grocery stores
